
Sicilian-style Peperonata
Description
The dish consists of peppers combined with garlic, onion, tomatoes, and herbs. All ingredients are cut into pieces and simmered in a pot over low heat. Peperonata can be eaten as is, used as a sauce, served with meat, or accompanied by white croutons. You can use peppers of a single color or a mix of different colors.

1. Wash all the peppers, peel the garlic and onion, slice the garlic into thin pieces and the onion into half-rings, and wash the herbs.

2. Cut the peppers in half, remove the seeds and membranes, then slice them into small pieces.

3. In a saucepan or pot, heat 0.5 cup of olive oil, add the garlic, and cook for 3-4 minutes.

4. Add onion to the pot with the garlic, mix and sauté for a couple of minutes.

5. Place all the peppers into a saucepan, mix gently.

6. Cook over low heat for about 20 minutes, until the peppers are tender.

7. Pour in the tomato puree, add fresh basil or oregano leaves.

8. Bring the contents to a boil, then reduce the heat.

9. Cook the peppers, stirring occasionally, for about 1 hour. Mix the remaining olive oil, salt, and vinegar, then pour into the pot. Remove the herbs and serve immediately, or let cool before serving.
