
Penne with Eggplant Sauce
Description
The recipe won't take much time. Penne is a type of pasta—short with angled edges. The dish is hearty and delicious. Serve the pasta hot, garnished with grated cheese. I first dry the eggplants in the microwave (you can use the oven), and then prepare the sauce based on them. Instead of penne, you can use other types of pasta. Serve hot.

1. Wash the eggplants and slice them into rounds (1 cm thick), then cut each round into small cubes. Transfer the eggplants to a bowl and sprinkle with salt.

2. Take two plates and place a paper towel on each, then arrange the eggplants in a single layer and microwave each plate for 5 minutes.

3. Transfer the eggplants to a bowl, drizzle with a little olive oil, and mix. Heat a skillet with olive oil and add the eggplants; sauté for about 10 minutes, stirring constantly.

4. Meanwhile, wash and finely chop the tomatoes, add them to the pan with the eggplants and mix. Peel and mince the onion and garlic, then add them to the eggplants.

5. Wash the herbs and finely chop them with a knife. Cook the penne in salted water until done.

6. Cut the olives in half, add them and the capers to the sauce, season with salt and pepper to taste, and add red pepper flakes.

7. After adding all the ingredients, stir the sauce and simmer over low heat for another 3-5 minutes.
