
Pelmeni Pie with Double Filling
Description
Homemade baked goods for tea. Fillings can be varied to your taste. Vegetables, mushrooms, even grains – create your own version! The idea is very good! Dumpling dough, very tasty, and an equally tasty filling. The pie will turn out not dry – juicy, because we will cook it in a skillet, more precisely braise it. The baking is ready. Serve at the table.

Begin the dough preparation. Sift the flour into a bowl, add salt, vinegar, beat in the egg and add the butter. Gradually pour in a mixture of milk and water, knead a firm dough. Let it rest under a cloth for half an hour.

Finely slice the onion, grate the carrot on a coarse grater. Lightly brown the onion, add the carrot and sauté, stirring, without letting it brown too much. Salt, pepper and let cool. In the cooled mixture add grated cheese, preferably one with a mild milky or buttery flavor. I used pizza mozzarella. Mix well.

Add grated onion to the minced meat, season with salt and pepper, and mix well.

Roll out a portion of the dough into a thin sheet. Place a strip of ground meat along the long edge. Fold the edge.

Lay a strip of onion‑carrot filling directly “under the barrel” and fold the edge over again. Trim the rolled strip and pinch the edge.

Roll it into a snail shape, tucking the pinch inward. Repeat the process until the ingredients are used up. Wrap a new strip around the first one, and so on. If you want a pattern of two strips of filling in the cross‑section, watch the placement of the filling. Or alternate, then the cross‑section will be checkerboard.

Transfer the cooked snail using a wide spatula into a generously butter‑greased pan. Pour in a glass of boiling water and cover with a lid. Simmer over low heat for 25 minutes. Do not lift the lid during cooking.

Brush the finished pie on top with the remaining butter.

Serve hot, cutting into individual portions. Serve your family's favorite dumpling sauces or sour cream on the side.
