
Pierogi with pork and cabbage
Description
Each of us can go to the store and buy ready-made products. But nothing can compare to and surpass the taste of homemade dumplings, prepared with love and the freshest ingredients. Traditionally, they are served with sour cream, vinegar and pepper, mustard, or with tomato and vegetable sauces. For the filling, you can use various combinations of ingredients, such as different types of meat, vegetables, or a combination of meat and vegetables.

1. To prepare the dough, sift the flour into a bowl, make a depression in the center, add a pinch of salt and pour in the sunflower oil, then add boiling water and vigorously mix with a whisk. Continue kneading the dough by hand, then let it rest for 20–30 minutes.

2. For the filling, wash the cabbage, carrot, and onion, then finely chop them. Cut the pork into small pieces with a knife. Mix the filling, add salt, pepper to taste, and ¼ cup of cold water.

3. Divide the rested dough into pieces, roll each piece into a thin circle, and cut out desired-size rounds using a glass. Place filling in the center of each round.

4. Gather the edges toward the center to form 5 petals, slightly flatten to make the dumplings thinner.

5. Prepare a steamer: place a pot of water on the stove and bring it to a boil. Then set a colander on top so that it does not touch the water. Put the dumplings into the colander, cover with a lid, and steam for 20 minutes.

6. For the dumplings, prepare the sauce. In a bowl, mix horseradish with beet and sour cream, season with salt and pepper to taste, and stir well.

7. Serve the cooked dumplings in portions with herbs and the prepared sauce.
