
Pork dumplings

First, you need to knead the dumpling dough. To do this, combine flour and eggs in a large bowl. Add salt and knead a stiff dough, gradually adding icy water. It's most convenient to do this using a hook attachment in a kitchen mixer.

Shape the resulting dough into a ball, cover it with plastic wrap, and then with a towel. Let the dough rest for fifteen to twenty minutes.

Now it's time to prepare the filling. Mix ground pork (you can make it yourself by passing pork meat through a meat grinder several times) in a deep bowl with raw eggs, chopped parsley and garlic, sliced onion, and salt and pepper.

Mix all the filling ingredients thoroughly. Roll out the dough as thin as possible, then use an inverted small glass to cut out circles from the dough. Place half a teaspoon of meat filling in the center of each dough piece, then carefully seal the edges. Put the finished dumplings into the freezer.

Cooking dumplings is as easy as can be. Just bring a pot of water to a boil, add salt, and drop in as many dumplings as you need. After five minutes of boiling, the dish is ready. Serve the pork dumplings with a spoonful of homemade sour cream.
