
Beet dumplings
Description
The recipe won't take much time. Making beet-filled dumplings is no harder than preparing the usual dish. Beets add juiciness to the filling, and their juice makes the dough firm and elastic. These dumplings hold their shape well and turn out not only appetizing but also very tasty. The flavor of the beet itself is barely noticeable, but the health benefits are undeniable. Give it a try. Prepare all the ingredients.

Peel the beetroot, cut it into pieces, and place in the blender container.

Grind until smooth.

Drain the beet on a sieve and squeeze well. We will need 0.5 cup of beet juice for making the dough. If the beet is not very juicy, simply add the necessary amount of water.

Pour the beet juice into a deep bowl, add the egg, salt to taste, and vegetable oil. Mix well and gradually add the flour in parts. Knead a firm, elastic dough that does not stick to your hands. Shape it into a ball, wrap in plastic wrap, and let it rest for 30 minutes.

Add the onion grated on a coarse grater, garlic pressed through a garlic press, salt, and spices to taste to the minced meat. Add chopped and squeezed beetroot—the amount depends on your preferences, it can be a few tablespoons or even a larger portion. Mix thoroughly. The filling is ready.

Cut off a piece of dough and roll it into a sausage shape. Cut the sausage into small pieces. I don't flour the work surface, because thanks to the beet juice, the dough turns out elastic and hardly sticks to hands.

Roll out each piece of dough into a circle and place the filling in the center. Then carefully pinch the edges together and shape the dumplings in any convenient way.

Ready-made dumplings with beetroot can be frozen for later use, or you can boil them right away in salted boiling water.

The dough will naturally change color during cooking since we used only natural ingredients, but this will by no means affect the taste of the finished dumplings. If you have some leftover grated beet, simply sauté it in a pan, add garlic, mayonnaise, salt, and ground pepper to taste, mix well, and serve the ready-made snack as a side dish to your hot meal.
