
Salmon dumplings
Description
The dish is easy to prepare without unnecessary complications. I recommend enriching the salmon dumpling recipe with lean white fish and boiled egg. Using only salmon may make the filling too fatty, and adding other ingredients will also be more economical. You can boil the dumplings in water or fish broth, for example, but I prefer to fry them. The dish is ready to serve.

1. You can use your favorite dumpling dough or store-bought. The store-bought kind is convenient because it's already cut into pieces. You'll need 30–40 pieces of store-bought dough. Remove the skin from the fish and finely chop it. Transfer the fish to a deep bowl. Add soy sauce, fish sauce, mirin, and lime juice. Add chopped shallot and garlic, as well as chili. Mix well.

2. Place about a teaspoon of filling onto each portion of dough.

3. Seal the edges of the dough well. Place the finished dumplings onto baking paper to prevent them from sticking to the surface.

4. I like to fry these dumplings in a pan. Fry them, turning, on both sides until golden brown. If you're afraid they won't cook through, add a small amount of water to the pan.
