
Meat-filled dumplings with chopped meat
Description
Pierogi are simple to prepare, but it's important to make the dough properly so that it turns out tender, thin, and not tough. Sour cream-based dough will give you exactly that result. The filling made from finely chopped meat, which can be any kind, turns out tender and juicy.

Prepare the ingredients for making dumplings.

Knead the dough. Put flour into a bowl and add salt.

Mix the sour cream with warm water.

Pour the mixture of water and sour cream into the flour with salt.

Knead a firm but sufficiently elastic dough. Knead for about 10 minutes. Then cover the dough with a towel and let it rest for 15–20 minutes.

While the dough is resting, prepare the filling for the dumplings. Wash the meat—I'm using chicken fillet—and chop it as finely as possible with a knife.

Place the chopped meat into a bowl.

Similarly, finely chop the onion and add it to the meat.

Season the minced meat with salt and pepper to taste, mix thoroughly.

Roll out the rested dough into a thin layer.

Using any cutter, cut out circles. Fill each circle with stuffing.

Form dumplings from the dough and filling. To do this, bring together the edges of the circle, as you would for vareniki. Then pinch the ends of the varenik together. Place the dumplings on a plate dusted with flour.

Boil the dumplings. Drop the dumplings into boiling salted water and stir gently to prevent them from sticking to the bottom of the pot. Once the dumplings float to the surface, continue cooking for another 7-8 minutes, then remove them from the water.

Place the cooked dumplings on a plate and serve hot with sour cream, butter, or sauces.
