
Chicken dumplings
Description
The dish is prepared without unnecessary complications. Traditionally, dumplings are made with a different filling, but I want to show you. The finished dish can be served at the table.

In a large bowl, mix the eggs, water, buttermilk, sour cream, and a pinch of salt. You can use kefir instead of buttermilk. Mix well.

Add 4 cups of flour to the resulting liquid mixture.

Mix until smooth.

Add the remaining three cups of flour to the dough one at a time, mixing thoroughly after each addition.

Finally, add the last cup of flour and mix. By this point, the dough should no longer stick to the sides of the bowl (if it still does, add a little more flour). Once the dough stops sticking to the sides of the bowl, knead it by hand for another 5 minutes. You should end up with soft and elastic dough.

Cover the resulting dough with a towel and let it sit in a warm place for half an hour.

Now we will start preparing the filling. Heat a small amount of vegetable oil in a frying pan, add finely chopped onion, and sauté over medium heat until golden brown (4-5 minutes).

Add the garlic pressed through a garlic press, sauté for another minute, then remove from heat.

Mix the chicken mince (preferably using mince made from chicken thighs, as it is the fattiest and juiciest), sautéed onions and garlic, salt, and chopped parsley. Mix thoroughly — and the filling is ready.

Don't be lazy—mix the mince thoroughly.

Now you can start shaping the dumplings. To do this, pinch off a piece of dough the size of a tennis ball, and roll it out into a thin sheet on a floured work surface.

For shaping dumplings, I use a special device that helps me save time. However, you can also do it the traditional way—cut circles from a sheet of dough, place a bit of filling in the center, fold and pinch the edges together.

In the same way, make dumplings from the remaining dough and filling.

Well, the chicken dumplings are ready. You can freeze some of the assembled dumplings and cook the rest right away. To cook, place the dumplings into boiling salted water and boil for 3 minutes after they float to the surface. Serve with sour cream, ketchup, melted butter—whatever you like best. ;)
