Mix flour, eggs, buttermilk, and water to form a fairly firm and elastic dough. Wrap the dough in plastic wrap and refrigerate for one hour. Mash the boiled potatoes into a puree. Cut the pork fat into small pieces and fry in a skillet. Add chopped onion and cook together until the onion becomes soft. Then transfer the onion and cracklings to the potato puree, season with salt and pepper, and mix well.
