Russian dumplings
Description
The dish is prepared without unnecessary complications. Making Russian dumplings at home is quite labor-intensive. However, no mass producer can match their flavor. They can be served with sour cream, fresh herbs, or broth, and if desired, you can make a larger batch and freeze them. The finished dish is ready to be served.

Step 1

1. The traditional Russian dumpling recipe begins with the dough. Combine about 500 grams of flour with eggs, sour cream, and a pinch of salt.

Step 2

2. Add vegetable oil and water (carbonated water can be used). Mix thoroughly and gradually add the remaining flour. The dough should be kneaded until quite firm. Cover it with a towel or plastic wrap and let it rest for about 1 hour.

Step 3

3. You can use the waiting time to prepare the filling. Wash the meat, dry it, and cut into small pieces. You can use any type of meat (in this version, beef and lamb). Pass through a meat grinder.

Step 4

4. Wash the green onions, dry and chop finely. Add to the meat. Mix well, then season with salt and pepper to taste. You can add your favorite spices or substitute green onions with onion.

Step 5

5. Dust the work surface with flour and pinch off a piece of dough. Roll it out quite thinly.

Step 6

6. Do you know how to make uniformly shaped and perfectly sealed Russian dumplings? The best way to handle this process is by using a dumpling press. Lightly dust it with flour and line it with dough. Place a small amount of filling into the indentations.

Step 7

7. Cover the top with another piece of dough and use a rolling pin to seal them together.
- 8
Step 8

8. Next, the process is quite simple - you need to sharply shake the dumplings out of the mold onto the table.

Step 9

9. Of course, if you don't have a dumpling maker at hand, you can easily make Russian dumplings at home by cutting circles with a glass and tightly sealing the edges. Place the finished dumplings into boiling salted water and cook for about 7–10 minutes. If desired, you can add bay leaf and allspice to the water for extra aroma.
