Description
Perfect for tea and coffee. I always try to prepare the dough for these buns using fresh yeast—maybe it's just my impression, but despite the convenience of dry yeast, the dough never turns out as fluffy and pliable. Just the smell of fresh yeast is worth it

Place all ingredients on the work surface. Warm the milk in a saucepan to a temperature of 35-38 degrees.

First, prepare the dough. Rub the yeast with your fingers into a large bowl, then add 1 tablespoon of sugar to it.

Pour in warm milk and mix these ingredients with a whisk until a smooth mixture is obtained.

Sift 100 grams of flour into this yeast mixture.

Mix everything until a homogeneous mixture is obtained—this is the starter. Cover the bowl with the starter with a kitchen towel and leave in a warm place for 30 minutes.

After half an hour, the sponge had risen and acquired a porous structure.

Place the soft butter into a separate bowl and add the remaining sugar and salt. Using a mixer, beat these ingredients until creamy.

Add the eggs to the resulting oil mixture.

Mix everything with a blender.

Pour the resulting mixture into the bowl with the starter. Stir with a spoon.

Then proceed to knead the dough by hand. You should end up with a soft dough that doesn't stick to your hands; you might need a little more or a little less flour, so adjust the amount yourself. Shape the dough into a ball in the bowl, cover with a kitchen towel, and let it rise for 1 hour. Punch it down, then let it rise a second time for another hour.

Prepare the apple filling for the buns. Peel the apples and cut the flesh into small cubes.

Place the sliced apples into a saucepan, add the butter, sugar, and cinnamon. Put on the stove and cook over low heat, stirring with a spatula until the sugar dissolves. The filling is ready.

Separate small portions of dough weighing 70 grams each from the main mass and roll them into balls.

Take one ball and flatten it with your hands into a pancake, place 2 tsp of the prepared cooled apple filling in the center.

Form buns from all the dough and filling, placing them seam-side down on a baking sheet lined with parchment paper. Brush each bun with a mixture of beaten egg yolk and 1 teaspoon of water. Bake the buns in a preheated oven at 180°C for 20 minutes.
