Description

Homemade pastries for tea. I'm happy to share my favorite recipe for yeast-free dough made with kefir, perfect for baked buns. The baked goods turn out so delicious and appetizing that it's impossible to stop at just one or two buns. The dough stays tender and soft even the next day. Plus, this recipe is budget-friendly, simple, and quick—that's its biggest advantage. Fillings can be to your taste; today I have stewed cabbage and mashed potatoes. Serve with tea or coffee.

    Prepare all the ingredients for the dough. Additionally, for brushing the buns, we will need egg yolk and milk.

    Pour room-temperature kefir into a deep bowl. Add salt and sugar.

    Pour in the oil.

    Add the sifted flour and baking powder.

    I first add 300 grams of flour, then gradually add the remaining flour in portions, as the amount needed may vary slightly.

    Knead the dough by hand until soft and elastic. If it sticks to your hands, add 1-2 more tablespoons of flour. Shape the dough into a ball, place it back into the bowl, cover with a towel, and let it rest for 30 minutes. Meanwhile, you can prepare the filling.

    Today's filling is our family's absolute favorite — stewed cabbage and mashed potatoes, which I prepared in advance so I wouldn't get distracted. You can use any filling: rice with mushrooms, minced meat, liver, green onions with eggs, or make sweet fillings.

    Divide the dough into equal pieces, the size depends on the desired size of the buns. I divided it into 20 parts, each weighing 40-50 grams.

    Shape the dough into balls and, adding a little flour to the work surface, roll the balls into thin flatbreads; the dough is very pliable. Place the filling onto the dough, about 1-1.5 tablespoons.

    Shape the buns, carefully sealing the edges so they don't come apart.

    Place the buns on a baking sheet lined with a special mat or, as in my case, silicone-coated parchment paper. You can also simply grease the baking sheet with vegetable oil.

    Combine the yolk with milk and brush the tops of the buns. Bake in the oven at 180 degrees for about 25 minutes, adjusting according to your oven. Since the dough is thin, the buns will be ready as soon as they turn golden brown.
