
Liver cake with processed cheese
Description
A tasty appetizer for any gathering. Beef liver contains little fat, yet it has almost a full range of beneficial nutrients and B vitamins. Therefore, liver dishes are considered diet-friendly. Of course, liver cake cannot be called diet-friendly, as it contains processed cheese and mayonnaise. The dish is quite high in calories, yet it is perfectly fine to prepare it occasionally and enjoy a slice. The appetizer is ready. Serve immediately.

Clean the liver of membranes and ducts and pass it twice through a meat grinder, adding a small onion. Add eggs, salt, pepper, marjoram, and cornstarch to the mince. Mix well.

Add the flour and milk to the ground meat and mix. Pour in two spoonfuls of butter; add baking soda quenched with lemon juice.

Mix well once more. Cook thin pancakes on a preheated skillet over medium heat, without overcooking them.

Peel the carrot and grate it on a coarse grater; thinly slice the second onion. Sauté the vegetables in a spoonful of butter until tender. Season with salt and pepper to taste, and add the nut seasoning. I’m using za’atar with sesame. Mix and let cool.

Mix the mayonnaise with grated garlic and pesto, and season lightly with salt.

It is easier to assemble the cake in a mold or ring. Trim the cake layers to fit the size of the springform ring. Spread a thin layer of processed cheese on a layer and place it in the ring.

Top with a layer of carrots and onion, and spread with mayonnaise. Repeat for all layers. Leave the top layer dry.

Place a light weight on top of the cake and refrigerate to soak (preferably overnight).

Before serving, fry the top of the cake with processed cheese and garnish with green onions and paprika.
