
Liver Cake with Omelette
Description
Works for holidays and everyday meals. Liver cake is usually not made with chicken liver, but it turns out much more tender that way. If the liver pancakes tear, add more flour to the batter. Mayonnaise is sometimes replaced with sour cream, but I think it tastes better with mayonnaise. Can be served warm or chilled.

Step 1

1. Pass the liver with onion through a meat grinder. Then add the egg and flour and mix with a whisk. You can use a blender instead of a meat grinder.

2. Add 50 ml of milk, salt, and pepper to the liver batter.

3. Heat a skillet with a small amount of oil. Spread the liver batter in a thin layer with a spoon. Fry the pancake under a lid until golden, then flip with a spatula.

4. For the omelet, beat 3 eggs and 150 ml of milk. Add a little salt.

5. Using the same principle, fry the omelet pancakes on both sides.

6. Cut the tomatoes into thin slices.

7. You can assemble the cake. Spread the liver pancake with mayonnaise, place the omelet on top, then add mayonnaise and a layer of tomatoes. Continue alternating layers until the end.

8. Garnish the cake with tomatoes, greens, halves of boiled quail eggs, and sliced olives.
