
Liver cake with carrots
Description
The recipe won’t take much time. The dish is truly beyond all praise! This appetizer cake will add variety to an everyday meal or decorate any festive table. I really like using chicken liver so the appetizer turns out as tender as possible, but you can use any other kind to your taste. Thin liver pancakes with a juicy vegetable filling make the dish incredibly appetizing! Be sure to try it. Serve with herbs and sauce.

Prepare all the ingredients according to the list.

Rinse the liver, pat it dry, and transfer it to a blender bowl.

Grind until smooth. If you don’t have a blender, use a meat grinder.

Transfer the liver to a deep bowl. Add onion grated on a coarse grater, or chop it in a blender or using a meat grinder. Season with salt and pepper to taste.

Add the flour and eggs.

Mix until smooth.

Preheat the frying pan and grease it with oil. The diameter of my pan is 18 cm. Fry the liver pancakes on both sides over medium heat.

Fry like regular pancakes.

Finely chop the onion and grate the carrot. Place the vegetables in a preheated pan with oil. Add salt and pepper to taste.

Sauté the vegetables, stirring occasionally, until tender.

While the vegetables are frying, the finished crepes will have time to cool down.

Prepare the sauce. In a deep bowl, combine sour cream, mayonnaise, and herbs—I’m using dill. If desired, you can add crushed garlic.

Now you can assemble the liver cake. Place the first pancake on a plate and spread it with a little sauce.

Place the vegetables on top.

Place the next pancake.

Similarly, assemble the entire cake.

The liver cake with carrots is ready. Put it in the refrigerator for a couple of hours to soak.

Before serving, garnish to taste. I used parsley and cherry tomatoes.
