
Liver Pâté with Pumpkin
Description
The appetizer is quick and easy to prepare. Choose an aromatic, fragrant pumpkin for the pâté; I used chicken liver. We’ll also add butter and a little onion. All the ingredients harmonize well in flavor. The pâté can be served with bread, and you can also use it to fill pancakes and tartlet shells.

Prepare all ingredients.

Peel the onion, rinse and pat dry. Cut the onion into small cubes.

Remove the seeds and fibers from the pumpkin. Finely chop the pumpkin.

Rinse the chicken liver thoroughly under running water. Remove the veins.

Heat the vegetable oil in a skillet, add the onion and pumpkin, and sauté for 8–9 minutes over medium-low heat.

Add the liver to the pumpkin and sauté for another 7–8 minutes. Then add a little water or broth — 70 ml — and simmer uncovered for 10–15 minutes. At the end of cooking, add salt, pepper, and butter. The butter should simply melt.

Transfer the contents of the frying pan to the blender bowl and blend on high speed. Let the pâté cool and serve.
