As a last resort, if you're worried about the specific taste, rinse the liver in milk before cooking and let it soak for a while—then the pancakes will turn out incredibly tender.

1. Rinse the liver and grind it in a food processor together with the onion. Add buckwheat, starch, eggs, and spices, then mix well.

2. Heat a pan well with vegetable oil, then spoon the mixture onto the pan, shaping it into rounds. Fry each patty on both sides.

3. When nicely browned, transfer to a plate and serve! If you prefer them softer, add a little water to the pan with the fried cutlets, cover, and simmer for about 5 minutes. Done!
