
Liver patties without flour
Description
In my family, we eat liver in any form: simply fried, as pancakes, in pies, or as pâtés. And these liver patties are also a favorite. They turn out very filling because they contain potatoes. That's why they can be served even without a side dish—just with a salad. Thanks to the boiled potatoes, the patty mixture isn't too runny, so these liver patties resemble regular meat patties more than pancakes. Do try making them—they're delicious. Thoroughly wash the liver, remove the films and veins. Cut the liver into pieces. Peel the onion.

For cutlets, it's better to boil potatoes in their skins. Now let's peel the potatoes.

Grind the liver together with the onion through a meat grinder or blend it with a blender.

We will finely chop the peeled boiled potatoes. You can grate them on a grater, or simply mash into a puree. Add the potatoes, mayonnaise, salt, pepper, and spices to the liver mixture.

Stir and check: if the mixture is a bit runny, add starch. Mix thoroughly once again.

Heat a pan with vegetable oil, then spoon the liver mixture onto the pan in the shape of patties. Fry over medium-high heat until browned, then flip the patties, cover the pan with a lid, and continue frying the other side under the lid.
