
Liver Hedgehogs
Description
This recipe won't take much time. Any liver works for making liver hedgehogs. For this recipe I used chicken liver — the pâté made from it turns out tasty and tender, with a pleasant aroma. For extra flavor, be sure to sauté the onion with carrots and don't forget to add butter. For decoration, use whatever you have on hand — herbs, legumes, etc. Serve with herbs and sauce.

Gather all the ingredients for making liver hedgehogs.

Peel the vegetables, dice the onion, and grate the carrot on a fine grater.

Grease the pan with vegetable oil, add the vegetables, and sauté the onion and carrots for a couple of minutes until tender.

Rinse the chicken liver and remove the membranes. Cut the offal into medium-sized pieces.

Add a piece of butter to the pan with the vegetables, melt it, and add all the chicken liver.

Mix the liver with the vegetables, fry everything together for 5–6 minutes, and season with salt and pepper to taste. Then remove the pan from the heat and let the liver cool.

Place the fried liver in the blender bowl.

Grind the liver until it becomes a pate. Cool the pate and refrigerate for 20–30 minutes.

Place a salad mix of greens on a plate. Shape balls from the pâté with an elongated snout; make the eyes and nose using black peppercorns.

Make the hedgehogs' quills using mayonnaise.

Garnish the hedgehogs with baby carrots or other vegetables — for example, green peas.
