
Liver pancakes with filling
Description
Homemade baked treats for tea. For this dish, you can use any liver: chicken, turkey, pork, or beef. However, pancakes made with chicken liver turn out especially tender. This quantity of ingredients usually yields 8–10 pancakes with a diameter of 22–24 cm. You can experiment with the filling, adding sautéed mushrooms, pickled cucumbers, sour cream, or cream, as desired. Prepare these rolls using this recipe, and they will fit perfectly not only into everyday meals but also into festive menus! You can also use these pancakes to make the delicious and widely loved "Liver Cake." The baked goods are ready. Serve at the table.

Prepare all the necessary ingredients.

Rinse the liver, cut it into medium pieces, and mince it using your preferred method. I use a blender, but you can also grind the liver through a meat grinder and prepare the dough using a whisk.

Add eggs, salt, and ground black pepper to the minced liver.

Pour in the milk, add the flour. Blend until smooth. Add the vegetable oil and mix again.

Transfer the liver dough into a bowl.

In a well-heated dry skillet, fry 8-10 thin pancakes.

Fry each side for 1-2 minutes.

For the filling, add diced onion and grated carrot to a skillet with oil. First, sauté the vegetables until soft.

Pour in a little water (about 50 ml) and simmer covered for 10 minutes. Season with salt and pepper to taste.

For the sauce, mix sour cream, garlic pressed through a garlic press, salt, and ground black pepper.

Stack the prepared pancakes.

Spread the pancake with sour cream sauce.

Roll into a log. Prepare all the rolls in the same way. Refrigerate for 1-2 hours.
