1. First, wash the liver, lightly dry it, and cut it into small pieces. This recipe for liver pancakes can be made with any type of liver. In this version, beef liver is used. Pass the liver through a meat grinder or blend it in a food processor. Peel the onion and mince it as well, following the liver.

2. Thoroughly mix the minced liver until the mixture becomes uniform.

3. Season the liver with salt and pepper to taste. Keep in mind whether the pancakes will be served with filling. If desired, add a pinch of basil or other favorite herbs. Add a little semolina to achieve the desired consistency.

4. Separate the egg whites from the yolks. Add them to the mixture separately, after beating. This step is not mandatory—you can add the whole eggs directly to the liver—but doing it this way makes the dough lighter and fluffier.

5. Mix everything thoroughly. The flour will help achieve the desired consistency. The mixture should be quite thick so that the liver pancakes hold their shape well when cooked at home. You may need from 1 to 4 tablespoons of flour.

6. Pour vegetable oil into a frying pan and heat it well. Using a ladle, pour in a little batter and fry on both sides. Serve the ready pancake with mushroom, cheese, or any other filling, as well as sour cream sauce.
