Description
Liver cutlets - a well-known and beloved dish. Every household prepares them differently, and each homemaker has her own trusted recipe. I also have my favorite recipe, and I'll tell you about it.

Step 1

To prepare our dish, wash the liver, let the water drain off, trim off all excess and inedible parts—membranes, ducts—and chop the liver into very small pieces—almost like ground meat.

We cut the peeled onion into small cubes.

Separate the yolk from the white and beat the white until thick foam forms.

To a bowl with liver mince, add onion, beaten egg white, yolk, flour, salt, and pepper to taste. Mix everything well.

Heat a skillet with a small amount of vegetable oil and spoon the meat mixture onto it, forming small patties. Fry on both sides until golden brown crust forms. Then transfer to a pot, add a little water, and simmer over medium heat for about 5 minutes.
