Description

Perfect with tea and coffee. Want to try something unusual? "Zavariki" — cookies made from choux pastry, tender, light, and incredibly delicious. Minimal ingredients, simple preparation — and you've got the perfect tea-time dessert. Serve cooled or slightly warm.

    Prepare the ingredients according to the recipe list.

    Pour water and milk into a saucepan or a heavy-bottomed pot, add sugar and salt, and stir in the butter.

    Heat until boiling, but do not boil.

    Add all the flour at once, return to the heat, and continue heating, stirring vigorously.

    The dough should come together into a ball and pull away from the sides of the saucepan. Dry the dough for another minute, stirring constantly, then remove from heat and let cool for 5–10 minutes before adding the eggs.

    Add each subsequent egg to the dough only after the previous egg has been fully incorporated.

    The dough is ready when it hangs off the silicone spatula in a triangle shape.

    Transfer the dough into a piping bag with a nozzle. If you don't have a piping bag, you can pipe the cookies using a teaspoon or simply transfer the dough into a plastic bag with a corner cut off. The shape of the cookies won't affect their taste.

    Pipe the cookies onto a baking sheet. This amount of dough yielded two baking trays.

    Bake the cookies in "top-bottom" mode at 200 degrees for 15 minutes, then reduce the temperature to 170 degrees and bake for another 20 minutes until golden brown.

    The cookies are very tender in taste, moderately sweet, but if desired, they can be sprinkled with powdered sugar or the tips can be dipped in chocolate glaze.
