
Hardtack cookies
Description
If you want to make the "Maria" crisp cookies more golden, leave them in the oven for a few minutes longer than usual. Instead of milk, you can add water to get completely lean cookies.

1. Add vegetable oil, baking soda, lemon juice, and starch to the milk. Start mixing the dough. If you want to make a fasting cookie, use water instead of milk. Mix the dough with a regular whisk.

2. At the very end, add the flour and knead the dough. It should be elastic in consistency.

3. Line the baking sheet with parchment paper and roll out the dough directly on it (I always do this with this type of dough, it's very convenient).

4. You can roll out the dough separately and cut out circles (using a glass or mug). Choose the shape and size of the cookies yourself (you can even use shaped cookie cutters to make various figures from the dough). If cutting separately, simply transfer the circles onto a baking sheet.

5. Place the circles a short distance apart from each other. Bake in the oven for 8–10 minutes.

6. This is what homemade "Maria" rolled cookies look like. After rolling, the dough tends to shrink slightly, so be sure to prick the centers with a fork.
