
Cookies in chocolate-honey glaze
Description
Recipe for cookies with lemon zest and black-and-white glaze made from honey, powdered sugar, vanilla, and chocolate. This recipe yields 18 to 24 large cookies, 10 cm in diameter. Serve cooled or slightly warm.

Step 1

1. Make the cookies. Preheat the oven to 190 degrees. Line a baking sheet with parchment paper. In a medium bowl, mix together flour, baking powder, and salt. In a large bowl, beat butter using a mixer. Gradually add sugar, continuing to beat. Add eggs, one at a time. Add 1/3 of the flour mixture and mix. Then add half of the milk and mix. Repeat with the remaining flour and milk, ending with the last 1/3 of flour. Mix in finely grated lemon zest or lemon juice and vanilla extract. Do not overmix.

2. Place the dough onto the prepared baking sheet, using 1/4 cup for each cookie. Space cookies 5 cm apart. Bake for 15-18 minutes.

3. Let the cookies cool on the baking sheet for 2 minutes, then let them cool completely on a rack before applying the glaze.

4. To make the glaze, melt the chocolate in a bowl. In a small saucepan, bring the water and honey to a boil over high heat. Remove from heat and add half of the mixture to the sugar. Whisk until smooth, gradually incorporating the remaining honey mixture, one teaspoon at a time. Mix in the vanilla. Add the honey mixture very slowly to prevent the glaze from becoming too runny. Fill a small piping bag with the glaze.

5. Draw a dividing line that splits the cookie in half.

6. Glaze half of each cookie up to the dividing line.

7. Add the melted chocolate to the remaining vanilla glaze and mix. If necessary, stir in the remaining honey mixture, one teaspoon at a time, until the desired consistency is reached.
