1. Prepare the ingredients for the cookies. The butter should be at room temperature—neither cold nor melted over a water bath! Measure all dry ingredients accurately on a scale.

2. Using a mixer, combine the butter with powdered sugar until creamy. Add water.

3. Add the starch mixed with flour in small batches and continue mixing with a mixer.

4. When the cookie dough is homogeneous, carefully spoon the dough onto a floured surface.

5. Gather the dough into a ball; it should be pliable but do not overwork it, otherwise it will become sticky. Wrap it tightly in a bag or plastic wrap and refrigerate for 1 hour to allow the butter to chill thoroughly.

6. Cut the dough into equal parts with a knife. To make small hearts, I divided it into 18 pieces. Roll each piece into a ball, then flatten it. Try to work quickly so the butter doesn't melt in your hands from the warmth.

7. Take a toothpick or skewer and start shaping the heart by pressing down on the skewer with one hand in the middle. Create an elongated bottom for the heart. Press on it to spread the edges of the heart further apart.

8. Use a skewer to make indentations like in the photo. Place the cookies in a preheated oven at 175°C (347°F) and bake for 12 minutes. The cookies won't change color; they will remain snow-white. Once baked, remove the cookies from the baking sheet and dust with powdered sugar.
