
Cookies with currant jam
Description
These cookies with currant jam are baked as a pie and then sliced. That's why this treat has different names—some call it grated pie, others call it Viennese cookies. But what matters most is that it tastes delicious, isn't it? These cookies will turn out delicious—this has been proven over time. You can make the dough thicker by adding more flour, or keep it slightly sticky, as in this recipe. Either way, the result will be the same—very tasty cookies. Serve them cooled or slightly warm.

Butter or margarine needs to be melted. Add eggs and sugar to the butter.

And mix everything with a mixer into a homogeneous mass.

Add flour mixed with baking powder. Instead of baking powder, you can use 0.5 teaspoon of baking soda and neutralize it with vinegar.

And mix the dough. In this recipe, the dough will be slightly sticky. If you don't like working with such dough, you can add another cup of flour.

We put one-third of the dough into a bag and place it in the freezer for 30 minutes.

Grease the baking sheet with oil and place the remaining dough on it. Spread it out evenly and form small edges.

Now add the blackcurrant jam. If your jam is too runny, mix in 1-2 tablespoons of starch.

Now grate the frozen dough from the freezer directly onto the baking sheet using a coarse grater. Cover the entire surface with the dough shreds.

Bake in a preheated oven at 180 degrees for about 30-40 minutes. Then cool and cut into cookies: into rhombuses, or squares. You can sprinkle with powdered sugar.
