
Cookies with marshmallow filling and chocolate glaze
Description
Recipe for cookies with cocoa, filled with marshmallow and topped with a glaze made of chocolate, butter, and vanilla extract. These cookies are delicious served at room temperature or chilled. Serve warm or cooled. Perfect with tea.

Step 1

1. Make the cookies. Preheat the oven to 175 degrees. Line baking sheets with parchment paper or silicone mats. In a medium bowl, mix together flour, cocoa powder, baking soda, and salt. In a large bowl, beat butter and brown sugar together until combined. Add eggs one at a time, beating well after each addition. Then add vanilla extract. Add 1/3 of the flour mixture and beat, then add half of the milk and mix. Repeat with the remaining flour and buttermilk (add 1/3 flour, 1/2 milk, another 1/3 flour, remaining milk, then the rest of the flour).

2. Place 1 tablespoon of dough per cookie, spacing them about 7 cm apart on the prepared baking sheets, and bake for 10 minutes. Let cool on the baking sheet for 2 minutes, then allow to cool completely on a wire rack.

3. Prepare the filling. Beat the butter and sugar together. Mix in the vanilla extract and marshmallow filling. Cover with a lid and refrigerate for 30 minutes. After chilling, transfer the filling to a piping bag and, working from the center of each cookie outward, pipe the filling onto the cookies. Refrigerate for another 30 minutes.

4. Make the chocolate glaze. Mix chopped chocolate, butter, and corn syrup in a bowl. Microwave for 30 seconds. Stir until smooth. If chocolate pieces remain, microwave for another 15 seconds. Once the mixture is smooth, stir in the vanilla extract. Cool to room temperature. Pour the chocolate glaze over the cookies on top of the marshmallow filling.

5. Place the cookies on parchment paper and let them stand for 2 to 3 hours. To speed up the glaze setting process, the cookies can be chilled.
