
Jam Cookies
Description
This recipe won't take much time. For our family, the jam-filled cookies described in this recipe are more than just homemade baking—they've become a true Sunday ritual. We get the kids involved in making them (they especially love sealing the jam-filled squares of dough) and we have a wonderful time—first baking the cookies, then eating them :) And the lovely scent of homemade baking lingers in the apartment all day long. I suggest you make these wonderful jam cookies too—they're very easy to prepare and turn out tasty and impressive :) Serve warm or chilled. Perfect with tea.

Step 1

In a large bowl, beat the cottage cheese, butter, sugar, and salt with a mixer on medium speed for about 2 minutes.

Reduce the mixer speed to low. While continuing to beat, gradually add the flour to the mixture in small portions. In the end, you should have a crumbly mixture.

Knead the dough by hand until it no longer sticks to your hands, then shape it into a ball.

Roll out the dough on a lightly floured surface into a sheet about 3 mm thick. Cut the dough into squares approximately 6 by 6 cm.

Place a teaspoon of jam or jelly in the center of each square.

Carefully pinch together the two opposite corners of the square to form something resembling a butterfly.

Do the same with the remaining squares of dough.

Place on a baking sheet lined with parchment paper. Put in an oven preheated to 175°C and bake for about 12 minutes.

Cool the finished jam cookies, dust with powdered sugar, and serve.
