
Cheddar Cheese Cookies

This cheesy cookie is best served hot. Serve warm or chilled. Perfect with tea.

1. Preheat the oven to 220 degrees. Mix flour, baking powder, and salt in a bowl. Add chilled butter cut into pieces and mix with a mixer at low speed until the mixture resembles coarse crumbs.

2. Mix buttermilk and egg in a small measuring cup, lightly beat with a fork. Add the egg mixture to the flour mixture and mix with a mixer at low speed.

3. In a small bowl, mix grated Cheddar cheese and a small handful of flour.

4. Add the cheese to the dough and mix at low speed.

5. Place the resulting dough onto a well-floured surface and knead thoroughly 6 times. Roll the dough into a rectangle measuring 12x25 cm.

6. Using a floured knife, cut the dough in half lengthwise, then crosswise to make 8 rectangles. You can make 12 smaller rectangles instead.

7. Place the cookies on a baking sheet lined with parchment paper. Beat an egg with 1 tablespoon of water or milk. Using a brush, coat the cookies with the egg mixture. Sprinkle with sea salt, if using.
