
Cookies with chocolate and hazelnuts
Description
The baked goods are simple and quick to prepare. This recipe yields 2 dozen cookies. Hazelnuts can also be substituted with 3/4 cup chopped almonds. Serve cooled or slightly warm.

1. Melt the butter and let it cool slightly. In a food processor, mix the nuts, sugar, flour, and salt. Be careful not to grind the mixture into a paste. Transfer the mixture to a bowl and stir in the butter and egg. Cover the dough with plastic wrap and refrigerate for about 30 minutes.

2. Place a parchment-lined baking sheet on the middle rack and preheat the oven to 175 degrees. Roll the dough into small balls and place them on the baking sheet. Chill in the refrigerator for 10 minutes. Press chocolate chips into the center of each cookie.

3. Bake until pale golden, 10 to 12 minutes. Be careful not to burn the cookies. Place on a rack and let cool.

4. Alternatively, instead of chocolate, you can use a jam filling. After removing the balls from the refrigerator, make an indentation in the center of each using your thumb, index finger, or the rounded end of a wooden spoon. Fill each indentation with 1/4 teaspoon of jam. Store the cookies in an airtight container at room temperature for about 3 days.
