
Chocolate Chip and Vanilla Cookies

This recipe will yield 1.5 dozen cookies, each 10 cm in diameter.

1. Sift flour, baking soda, baking powder, and salt into a bowl. Set aside. Using a mixer, beat butter and sugar together for about 5 minutes. Add eggs one at a time, beating after each addition. Add vanilla extract and beat.

2. Reduce speed to low, add the flour mixture and beat for 5 to 10 seconds. Add the chocolate chips and mix gently, taking care not to break them.

3. Wrap the dough in plastic wrap and refrigerate for 24 to 36 hours. When you're ready to bake the cookies, preheat the oven to 175 degrees. Line a baking sheet with parchment paper or a silicone mat.

4. Using a spoon or scoop, place the dough onto the prepared baking sheet, shaping into cookies. Lightly sprinkle the cookies with sea salt and bake until golden, 18 to 20 minutes. The cookies should be soft. Transfer the baked cookies to a wire rack and let cool for 10 minutes. Repeat with the remaining dough, or refrigerate the dough for baking the next day.
