Peach Cookies

Description

The pastry is simple and quick to prepare. Preheat the oven to 200 degrees. Place one phyllo sheet on the work surface. Brush one side with melted butter. Place a second phyllo sheet on top and brush it with the remaining butter. Cut the phyllo dough in half lengthwise, then cut each half into 4 pieces to make 8 rectangles. Place 4 rectangles onto a baking sheet lightly sprayed with oil. Arrange the remaining rectangles on top. Place 10 to 12 pieces of peach onto each pastry and sprinkle with 1 teaspoon of brown sugar. Bake for 10 minutes. Remove from the oven and sprinkle the pastries with the remaining sugar. Return to the oven and bake for another 5 to 7 minutes, until the sugar has melted.
