
Cookies with nuts and figs
Description
The pastry is simple and quick to prepare. A recipe for biscuit cookies with walnuts, figs, orange zest, cinnamon, and nutmeg. This recipe yields approximately 24 biscuit cookie slices. Serve cooled or slightly warm.

1. Chop the walnuts. Cut the figs into 4 pieces. Preheat the oven to 160 degrees. Spread the walnuts on a baking sheet and roast for 5-7 minutes, until golden brown and fragrant. Let cool completely.

2. Place the nuts and figs in a food processor and chop. In a bowl, use a mixer to beat the butter and sugar together. Add the eggs, one at a time, and beat. Then beat in the vanilla extract and orange zest. In another bowl, mix together the flour, baking powder, baking soda, salt, and spices. Add the dry ingredients to the butter mixture and mix. Stir in the walnuts and figs.

3. Wrap the dough in plastic wrap and refrigerate for 35–40 minutes. Lightly grease a baking sheet or line it with parchment paper. On a floured surface, roll out the dough into a rectangle and transfer it to the baking sheet. In a small bowl, beat the egg white with a fork. Using a brush, coat the dough with the egg white and sprinkle with sugar. Bake for 15–20 minutes, until the dough is lightly golden, firm to the touch, and slightly cracked. Let cool for about 40 minutes.

4. Cut into 1 cm thick pieces slightly diagonally using a serrated knife.

5. Place the slices in a single layer on a baking sheet and bake for another 20 minutes.
