
Cookie with filling
Description
The pastry is easy and quick to prepare. Jam or sweetened condensed milk work well as fillings for the cookies. The cookies themselves are made with flour, margarine, sour cream, and egg.

1. Prepare the ingredients. Take the margarine out of the refrigerator in advance so it reaches room temperature. Use thick jam. I have homemade gooseberry jam.

2. Rub the margarine and sifted flour together with your hands. Do this quickly so the margarine doesn't melt.

4. Then add sugar, baking soda, and egg. Gather the dough into a ball.

5. Do not add too much flour; the dough should be slightly sticky to the hands.

6. Cut off one quarter of the dough and put it in the freezer to freeze for 1 hour. Refrigerate the remaining dough for 1 hour.

7. After an hour, preheat the oven to 200 degrees. Roll out the dough on a silicone mat or greased paper. The thickness should be no more than 1 cm.

9. The part of the dough that was in the freezer should be grated on a coarse grater over the dough. Put the cookies in the oven for 30 minutes.

10. Remove the baking sheet and cut the still-warm cookies into squares. Set aside to cool. Serve!
