
Mint and dark chocolate cookies

Sift the flour, cocoa (powder), salt, and baking powder into a bowl. Mix together.

Place pieces of chocolate and butter into a small saucepan and melt over low heat. Stir actively to prevent burning. Once fully melted, remove from the heat.

Mix the mint with sugar using a blender or food processor until the mixture resembles wet sand in consistency. Add this mixture to the melted chocolate. Stir.

Lightly beat the eggs and add them to the chocolate mixture along with vanilla extract.

Now mix the chocolate mixture with the dry flour mixture from the first step. Mix until smooth, wrap the resulting dough in plastic wrap, and refrigerate for 1 hour.

After an hour, using an ice cream scoop (or a regular spoon), shape the dough into nice balls.

Roll each ball in sugar.

Next, roll the balls in powdered sugar and place them on a baking sheet lightly greased with butter. Put in the oven and bake for 10–12 minutes at 180°C.
