
Cookies with ice cream
Description
The dish is prepared without unnecessary complications. Recipe for refreshing cinnamon cookies with ice cream. This recipe yields 3 dozen sandwich cookies. The finished dessert can be served immediately.

1. Preheat the oven to 200 degrees. Line a baking sheet with parchment paper or grease it with oil. In a large bowl, mix together flour, cream of tartar, baking soda, and salt. In another large bowl, beat together butter and vegetable shortening. Add 1 1/2 cups of sugar and beat until combined. Add eggs one at a time, beating well after each addition. Add half of the flour mixture and mix, then add the remaining flour and beat until incorporated.

2. Mix 3 tablespoons of sugar and 1 tablespoon of cinnamon, set aside. Roll the dough into balls, using 1 tablespoon of dough for each, and coat them in the sugar-cinnamon mixture.

3. Place the balls on a baking sheet, leaving plenty of space between them.

4. Bake for 9-11 minutes, until the edges are browned. Let cool.

5. Let the ice cream sit at room temperature for about 20 minutes to soften. Stir and return to the freezer for 15–20 minutes.

6. Place 1-2 tablespoons of ice cream on the bottom half of a cookie. Top with the remaining cookie halves and gently press together so the ice cream spreads to the edges of the cookies. Store the cookies in the refrigerator until ready to serve.
