
Cookies with marzipan

If you don’t have marzipan, no problem—I’ll tell you how to make it. With this recipe you’ll end up with a little more almond than the recipe calls for. Prepare the ingredients.

If you don’t have ready-made marzipan, here is a recipe for making it. Pour boiling water over the almonds and leave for 5 minutes, drain the water, then pour boiling water over them again. After that, you can rinse with cold water.

After pouring boiling water over the almonds, they will peel very easily. Spread the almonds on a paper towel and dry them.

Lightly dry the almonds in the oven or in a dry skillet; you do not need to brown them—only a couple of minutes to remove any remaining moisture.

Cool the almonds and grind them in a blender together with 50 grams of powdered sugar.

Pour the sugar into a saucepan, add 50 ml water, bring to a boil, and cook the syrup. While the syrup cooks, do not stir; try to keep sugar from getting on the sides of the saucepan. Cook the syrup to 118–120 degrees or to the soft-ball stage. This will take about 5–7 minutes from when it comes to a boil.

Pour the sugar syrup into the blender in a thin stream and blend until you have a “sticky mass”. If the marzipan mass is not sticky enough, you can add a little water.

Wrap the marzipan in plastic wrap and put it in the refrigerator.

Let’s return to making the marzipan cookies. Put the flour, 50 grams of confectioners’ sugar, and salt in the blender; add cold butter cut into cubes and one egg yolk. Pulse until crumbly.

Roll the shortcrust dough into a sheet between two layers of parchment paper. Refrigerate the dough for 2 hours to stabilize.

While the dough stabilizes, prepare the marzipan filling. Take 150 grams of marzipan, pour in 1 egg white, add lemon juice; you may add 4 drops of almond essence to enhance the flavor, and purée everything together.
