
Cookies with poppy seeds and raisins
Description
Homemade treats for tea. This recipe yields 30 to 44 cookies, depending on their size. The cookies take only 10-15 minutes to bake. Serve cooled or slightly warm.

Step 1

1. Prepare the dough. Mix lemon zest, powdered sugar, flour, and salt in the bowl of a food processor. Add cubed butter and egg yolks, and pulse until combined. Wrap the dough in plastic wrap and refrigerate for 1 hour or overnight. Prepare the filling. Grind poppy seeds in a coffee grinder. Heat milk, sugar, orange zest, ground poppy seeds, and raisins in a small saucepan over medium heat. Cook until the mixture thickens, about 15 minutes. Add lemon juice, brandy, orange liqueur, and butter, and cook for 2 minutes. Finally, stir in vanilla extract. Remove from heat and chill in the refrigerator.

2. Line two baking sheets with parchment paper. Roll out the dough to a thickness of 6 mm and, using cookie cutters, cut out circles.

3. Place a small mound of 1/2 teaspoon filling in the center of each circle and bring the sides together to form a triangle. Place the cookies on baking sheets and brush with beaten egg.

4. Place the baking sheets in the refrigerator for 20–30 minutes—this will help the cookies keep their shape during baking. Meanwhile, preheat the oven to 175 degrees. Bake the cookies until golden, for 10 to 15 minutes. Let cool on the baking sheet for 5 minutes.
