
Lime and vanilla cookies
Description
Delicious baked treats for the whole family. This recipe yields 50 cookies. The prepared dough can be frozen for up to 2 months. The baking is ready. Serve at the table.

1. In a bowl, use an electric mixer to beat the butter and 1/3 cup powdered sugar. Add lime zest, lime juice, and vanilla extract, and beat again. In a separate medium bowl, mix together the flour, starch, and salt. Add the flour mixture to the butter mixture and beat with the mixer at low speed until well combined.

2. Roll out the dough between two sheets of parchment paper into two logs about 3.5 cm in diameter. Refrigerate for 1 hour.

3. Preheat the oven to 175 degrees. Line two baking sheets with parchment paper. Pour the remaining 2/3 cup of powdered sugar into a plastic bag. Remove the parchment paper from the dough and cut the dough into 6 mm thick rounds.

4. Place the cookies on baking sheets, 2.5 cm apart. Bake until lightly golden, about 15 minutes.

5. Place the cookies on a wire rack and let cool slightly for 3-4 minutes. Put the warm cookies into a bag with powdered sugar and shake to coat. Bake or freeze the remaining dough. Store the cookies in an airtight container for up to 2 weeks.
