
Sesame cookies
Description
To get the cookies as close as possible to crackers, roll the dough out to 0.3 cm. If you roll it a bit thicker, the cookies will be soft but still tasty. You can vary the amount of onion, but it’s best not to use less than 50 g, or the flavour fades.

Prepare the necessary ingredients.

Toast the sesame seeds in a dry skillet.

Wash the green onions, pat dry and chop finely.

In a bowl, mix the dry ingredients: wheat flour, bran, baking powder, and salt.

Add sour cream to the dry ingredients. Grate the cold butter. Rub the bowl’s contents lightly with your hands.

Add toasted sesame and sliced onion. Start mixing the dough with a spoon.

As soon as the dough becomes hard to stir, knead it by hand. At first it will crumble a little, but it will gradually come together into a ball. Shape the finished dough into a round.

Lightly sprinkle the work surface with bran. Roll out the dough to a thickness of 0.3–0.5 cm.

Cut out shapes with a cookie cutter.

Transfer the cookies onto a baking sheet lined with parchment paper. Bake in an oven preheated to 200°C for 12–15 minutes. The time depends on the thickness of the cut cookies. Also account for your oven’s quirks.

When the time is up, take the baking sheet with the cookies out of the oven. They should be golden in color. Let cool and serve.
