
Cookies with Cream Cheese
Description
Perfect with tea and coffee. The cookies turn out soft and crumbly at the same time. The important thing is not to overbake them in the oven—the cookies will turn hard. If you want a darker cookie color, replace 25% of regular cocoa with alkalized cocoa. If you like, you can mix a little grated nuts or chocolate chips into the dough. The cookies pair well with sweet tea, hot coffee, or plain milk. Serve warm or chilled. Perfect with tea.

Prepare all the necessary ingredients for making cream cheese cookies. Take the butter out of the refrigerator ahead of time so it softens.

In a bowl, mix wheat flour, cocoa, and baking powder.

Cut the soft butter into pieces and place them in a bowl. Add the sugar to the butter and beat with an electric mixer on medium speed until the sugar crystals dissolve, about 3–4 minutes. The butter should become white and airy.

Crack an egg into the bowl with the butter and whisk until smooth and evenly mixed.

Mix the cream cheese with powdered sugar, divide the dough into equal parts and shape into balls. Flatten each ball into a disc and place a portion of the sweet cream cheese filling in the center.

Join the edges of the dough at the top, pinch them together and shape into a ball. Line the baking sheet with parchment paper and arrange the cookies a short distance apart, pressing them down slightly.

Place the baking sheet with the cookies in a hot oven and bake at 180 degrees for 15–20 minutes. Take the finished cream cheese cookies out of the oven, transfer them to a plate, and let them cool completely.
