
Cookies with cinnamon and chocolate
Description
This aromatic cookie simply melts in your mouth, and the cinnamon makes it a true holiday treat. The cookies are very quick to prepare and go perfectly with a glass of milk. Serve them warm or chilled. Ideal with tea.

Step 1

1. Preheat the oven to 220 degrees. Lightly grease a 20x20 cm baking pan and set aside. In a large bowl, mix together flour, 1 tablespoon of brown sugar, baking powder, 1 teaspoon of cinnamon, and salt. Pour in 1 1/2 cups of cream and stir until smooth. Transfer the dough onto a lightly floured surface and roll it into a long, thick rectangle. The dough will be wet and sticky. Cut the rectangle into approximately 8 equal squares.

2. Place 4 squares into the prepared pan. Sprinkle with the remaining 2 tablespoons of brown sugar, 1/2 teaspoon of cinnamon, and half of the chocolate chips. Place the remaining 4 squares on top and gently press down onto the bottom layer. Sprinkle the remaining chocolate chips over the top.

3. Bake the cookies for 14–16 minutes, until slightly golden on the outside. Then remove from the oven and, using a knife, spread the chocolate chips over the dough surface. Whip the remaining 1/2 cup of cream, powdered sugar, and vanilla extract. Drizzle the cookies with the icing.
