
Kiwi cookies
Description
Homemade tea‑time baking. If you love surprising your loved ones, then try this recipe! Making kiwi cookies is quite simple, and the ingredient list is minimal. For a trial, you can halve the required ingredients and make a small batch first.

Prepare all the ingredients.

Choose the ripest and softest kiwis, we’ll need 4 of them, peel them and mash with a fork until smooth.

Add sugar and honey. Place the bowl over a water bath and, stirring, wait until the sugar dissolves.

Then add the baking powder, and as soon as white foam appears, remove from the heat and let it cool.

At this stage, if desired, you can add a few drops of green food coloring.

Then add the flour in portions. Use enough flour to achieve a pliable dough.

Dust the work surface with flour, roll out the dough to a thickness of 4–5 mm, and cut out flower‑shaped cookies with a cutter. Transfer the pieces onto a baking sheet lined with parchment paper.

Place a slice of kiwi in the center and fold the edges upward. For extra security, I also joined the edges together. Bake the cookies in the oven at 180 degrees for about 10 minutes. The cookies bake quickly, do not over‑dry them.

The finished kiwi cookies can be brushed with liquid honey or dusted with powdered sugar.

From the leftover dough, I also cut out small flowers with a cutter and baked cookies.

Remove from the oven and serve warm or cooled.
