
Cookies with pistachios, chocolate, and cranberries
Description
The recipe won't take much time. You can replace dried cranberries with dried cherries, use almonds or hazelnuts instead of pistachios, and substitute white chocolate with dark chocolate. Let the baked cookies cool before serving. Store them at room temperature, covered with a towel.

1. In a bowl, use a mixer to beat the softened butter, brown sugar, and granulated sugar until fluffy and smooth.

2. Add vanilla extract and egg, mix well.

3. In a separate bowl, sift the flour and baking soda; if you are using unsalted pistachios, add salt as well.

4. Add the flour mixture to the butter and mix thoroughly using a wooden spoon.

5. Chop the pistachios and add them to the bowl, along with the dried cranberries (dried cherries) and chocolate chips, then mix everything thoroughly.

6. Spoon the dough onto a greased baking sheet. Place the baking sheet with the cookies into a preheated oven at 190 degrees and bake for 8–10 minutes, until the cookies turn golden brown. Remove them from the oven and transfer to a wire rack to cool.
