
Peanut butter cookies with chocolate filling
Description
The recipe won't take much time. A recipe for making wheat flour cookies with peanut butter and a chocolate and cream filling. This recipe will yield a little over two dozen sandwich cookies.

1. Preheat the oven to 190 degrees. Mix flour, salt, and baking soda together in a small bowl. In a large bowl, beat butter and sugar together. Add egg and beat. Add peanut butter and beat. Mix in vanilla. Add flour in two batches and mix until smooth.

2. Roll the dough into small balls, using 1 tablespoon of dough for two cookies. Place the balls on a baking sheet lined with parchment paper.

3. Gently press each ball with a fork in two directions to create a lattice pattern on the surface. Lightly sprinkle the cookies with sugar.

4. Bake for 12 minutes until browned. Let the cookies cool.

5. Make the filling. Place chopped chocolate in a small bowl. In a small saucepan over medium heat, warm the cream and corn syrup until boiling, then remove from heat. Slowly pour the hot cream over the chocolate. Stir with a rubber spatula until all the chocolate is melted and thoroughly combined with the cream. Let cool for 10–15 minutes. Spread 1–1½ teaspoons of the filling onto the bottom side of half of the cookies, top with the remaining cookie halves, and gently press together. Let stand for 20–30 minutes before serving.
