
Dukan Diet Cookies
Description
Homemade treats for tea. Even if you're on a diet, there's no reason to give up tea with cookies! These cookies can be baked during the "Attack" and "Cruise" phases. The Dukan diet allows the use of oat bran—shall we give it a try? Serve warm or chilled. Perfect with tea.

Prepare the ingredients for the cookies. You can use a sugar substitute to taste, or omit it altogether, in which case the cookies will be bland. Grind the bran into flour; a coffee grinder works perfectly for this.

Mix oat bran with warm boiled water. Stir and let it sit for 10 minutes, allowing the bran to swell slightly.

Separate the egg into yolk and white. Place the yolk in a bowl with the bran. Beat the white with a pinch of salt using a mixer until stiff peaks form.

Add baking powder and sugar substitute. You can use stevia powder or tablet sugar substitute; grind the tablets in a mortar into a powder beforehand.

Now add the egg white.

Mix everything well. The cookie dough is airy and not very thick.

Line a baking sheet with parchment paper, take the dough with a tablespoon, and place it onto the paper, keeping space between each portion.

Bake the cookies at 180 degrees for about 15 minutes. Let them cool, then remove from the paper; they come off easily and don't stick.
