
Cookies with clarified butter
Description
The recipe won't take much time. Because shortcrust pastry dough is used for the cookies, you must not knead it for long. As soon as it has come together into a smooth lump, shape it into a ball and refrigerate. Only after it has cooled should you shape the cookies for baking. Baking is done. Serve at the table.

Prepare the necessary ingredients.

In a bowl, combine room‑temperature clarified butter and sugar. Mix thoroughly.

Add the egg. Stir.

Add flour, salt, and baking powder.

Begin mixing the dough with a spoon. As soon as the dough starts forming lumps, knead it with your hands.

Do not knead the dough for long. Gather it into one ball and refrigerate for 15 minutes.

When the time is up, remove the dough from the refrigerator. Pinch off small pieces of dough (22–25 g) and shape each into a round cookie. Place them on a baking sheet. Prick each cookie several times with a fork. Bake the sheet of shaped cookies in an oven preheated to 180°C for 12–15 minutes. Adjust as needed for your oven.

Take the baked cookies out of the oven. Let them cool slightly on the baking sheet.
