Mix the flour and powdered sugar. Sift them into a bowl.

Transfer the dry mixture to a baking sheet lined with parchment paper. Place in the oven for 5 minutes at 150 degrees. After that, sift the mixture again into the bowl where the dough will be mixed. Put the egg whites into a food processor and beat until stiff peaks form, gradually adding sugar.

Continue beating the egg whites with sugar until stiff peaks form.

Transfer the whites to a bowl with flour, mix for 30 seconds. Add food coloring, mix again.

Transfer the dough into a piping bag. Pipe cookies onto a baking sheet lined with parchment paper (each cookie should be 3-4 cm in diameter). Leave them for 40 minutes to air-dry. Then bake for 15 minutes in a preheated oven at 150°C.

Prepare the filling. Soak the gelatin in water to let it swell. Blend the cherries in a blender into a puree.

Mix one-third of the cherry purée with the gelatin, heating the mixture in a saucepan. Combine with the remaining cherry purée, adding liqueur and sugar.

Beat the mascarpone slightly and mix with the cherry mixture until smooth. Place the mixture in the refrigerator for 1 hour.
